Sodium Aluminium Sulphate (SAS)

Sodium Aluminum Sulphate is a chemical compound in a class known as alums. It is one of the most often widely used leavening agent, added to baking powder, which brings out carbon dioxide in batter and dough. It is commonly used in cakes, muffins and biscuits. Another application of Sodium aluminum Sulphate is to make foods acidic (eg in Processed Cheese). It is is also used to clarify water. As food ingredient, it is often labeled as food additive E521. It is also known as Aluminum Sodium Sulfate, Sodium Aluminum Sulfate, Soda Alum, SAS etc.
